Biscuits & Gravy
Recipe provided by Mike Jackson, Station 93 - Greenwood
1 pound sausage
3 heaping tablespoons flour
Salt and pepper
Between a quart and a quart and a half of milk
Crumble and brown the sausage in large skillet over medium heat. Add the flour and stir. Let the flour and sausage mixture cook for a few minutes which gives the gravy a nice rich brown color. Add the milk and salt and pepper to taste. Continue cooking over medium heat stirring constantly until gravy thickens. If the gravy is not thick enough, continue cooking until it reduces and becomes thicker. Split biscuits and serve gravy over the biscuits.
Jackson’s cooking is appreciated by his fellow firefighters. “It’s always good. It’s definitely something to look forward to,” said Adam Flynn, a firefighter who has been working at Greenwood Station 93 with Jackson for about six months. Firefighter Rob Stecher was on loan from Greenwood Station 91 and recently had his first opportunity to taste Jackson’s cooking. “It’s very tasty,” Stecher said.
