“This is a very simple breakfast meal,” Cox said.
1 pound country sausage
18 large eggs
1 pkg. shredded cheese
1 diced red bell pepper
1 diced yellow or green pepper
1 diced white onion
Brown your sausage in a large fry pan or cast-iron skillet. Crack all of the eggs into a large bowl and beat until the eggs are well mixed. Add milk if you desire fluffy eggs but not too much for this dish. When the sausage is done, drain and place back into fry pan or cast-iron skillet. Add your peppers and onion to the eggs and mix in. Pour the mixture into the skillet, over the top of the sausage. Add the shredded cheese to your desire over the top of the eggs. Place the skillet into the oven and bake at 350 degrees until the mixture is cooked solid all the way through. Remove from oven and cut into slices and serve.
