Carrot Cake

Recipes from Edelweiss Restaurant and Bar, 8602 S. Meridian St., Indianapolis

  • 4 eggs
  • 2 cups sugar
  • 3 cups grated carrots
  • 1 1/2 cups oil
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 cup chopped walnuts

Blend eggs and sugar. Add carrots and oil. Mix all dry ingredients together. Combine with egg mixture. Mix gently. Pour into greased baking pan. Bake at 350 degrees for  30 to 35 minutes.
