Poor Man’s Lasagna

“This is a great meal that can feed lots of people for very little money,” Cox said. “These are the meals I specialize in.”

  • 2 pounds ground beef of your choice
  • 1 pound Italian sausage
  • 1 diced green bell pepper
  • 2-pound box of macaroni noodles
  • 1 container Parmesan cheese
  • 1 container cottage cheese
  • 2 family-size cans tomato soup

Prepare the noodles according to package directions. Brown ground beef and sausage in the same fry pan. When the meat is cooked through, drain it and set aside. Place the cut-up green pepper in the pan with the meat. When the noodles are done, drain and place them back in pot. Mix the meat and peppers in with the noodles and add the two cans of tomato soup. Heat to help thicken the mixture. Add the entire containers of the Parmesan and cottage cheese. Heat through and serve.
