Steve’s Mom’s Tostada Casserole

Recipe provided by Steve Moan, Station 21 – City of Franklin

  • 1 pound ground beef
  • 1 taco seasoning packet
  • 1 regular sized bag of corn chips
  • 1 can of refried beans
  • 1 can of tomato sauce
  • 1 bag of shredded cheese

Preheat oven to 350. In a sauce pan, over medium heat, mix tomato sauce and refried beans. Stir occasionally until well mixed. While beans and sauce are heating, brown ground beef. Drain and rinse beef, make taco meat according to package directions. Line bottom of 9×13 pan with a layer of corn chips. Add some taco meat, then sauce mixture followed by cheese. Repeat until ingredients are gone, with the exception of a small amount of corn chips and cheese. Crumble remaining corn chips on top. Place in oven and bake for 40 minutes uncovered. Remove and add remaining cheese, and then bake for additional 5 minutes. Serve with sour cream, taco sauce, lettuce and tomatoes.
